I'll be honest, paying bills, race entry fees and training makes life a little tough at times. Sometimes, you'll have to choose the cheaper option. Which leads to last nights dinner. Breadcrumb Furikake Tilapia fish wraps.
Cooling on a wire rack so both sides will be crispy.
Ready for wrapping. Placed on a whole wheat tortilla, topped with sriracha sauce, lettuce and more furikake.
Recipe
Tilapia fillets, halved lengthwise
Flour
2 eggs, lightly beaten
Furikake
Bread crumbs
Chopped lettuce
Tortilla
Method
Coat fillets in flour first, then dip in egg followed by dipping in bread crumb/furikake mixture. Coat well. Deep dry in oil. Cool on wire rack over paper towels. Once cooled, place on top of tortilla, add sriracha sauce, lettuce and more furikake. Wrap and enjoy.
Once you get over the whole "Ala wai Canal" thing, Tilapia isn't that bad at all. It's cheap, no strong fish taste and easy to cook. Go out and try it!
